2 (8-ounce) packages cream cheese, softened
2 cups finely shredded sharp Cheddar cheese
1 (8-ounce) can crushed pineapple, drained
2 tablespoons green pepper, diced
1 tablespoon onion, diced
1 tablespoon jalapeño pepper, diced
1 teaspoon seasoning salt
1/4 cup chopped pistachio nuts
1 scallion

1. In a large bowl, combine all ingredients, except nuts and scallion, and mix well until thoroughly combined. On a large platter, form into a football shape.
2. Sprinkle with chopped pistachios to cover entire football. Slice scallion for decorating the cheese ball.
3. Cover lightly with plastic wrap and refrigerate until ready to serve.
