Teach your kids a few tasty skills in the kitchen, all the while having fun and baking up a "good for them" midday treat! Our sweet lemon squares are filled with the taste of sunshine!

2-1/2 cups all-purpose flour, divided
1 cup (2 sticks) butter or margarine, softened
1 cup confectioners' sugar, plus extra for topping
2 cups granulated sugar
4 eggs
1/2 cup lemon juice
1 teaspoon lemon extract

1. Preheat the oven to 350°F. In a medium bowl, combine 2 cups flour, butter, and confectioners' sugar; mix until crumbly. Press into the bottom of a 9"x13" baking dish to form and crust. Bake for 15 minutes.

2. Meanwhile, in a large bowl with an electric beater on medium speed, beat the remaining 1/2 cup flour, granulated sugar, eggs, lemon juice, and lemon extract until well blended. Pour over the hot crust. Bake for 25 to 30 minutes, or until set.

3. Allow to cool, then cut into squares. Dust with extra confectioners' sugar and serve.
