Mr. Food: Cranberry Orange Nut Pancakes

Get out your griddle and watch your gang flip over these scrumptious pancakes that taste gourmet, 'cause they're packed with cranberries, chopped pecans, and orange zest! Yes, fancy can be easy!

Makes 12 pancakes

2 cups biscuit baking mix
1 cup milk
2 eggs
1 tablespoon sugar
1/2 cup sweetened dried cranberries
1/2 cup chopped pecans
1 teaspoon orange zest
Butter

  1. In a large bowl, combine biscuit baking mix, milk, eggs, and sugar. Stir in dried cranberries, pecans, and orange zest; mix until well combined.

  2. Preheat a griddle or skillet over medium heat. Melt 1 tablespoon butter on griddle. Pour 1/4 cup batter per pancake onto hot griddle. Cook until pancakes begin to bubble and edges begin to set. Flip pancakes and cook 1 to 2 more minutes, or until golden, adding more butter as necessary.
