The number of universities offering courses, certificates or degrees in organic or sustainable agriculture is on the rise.

Experts say the growth is fueled by consumer demand for healthier food. Shoppers also want food produced on a sustainable farm or in an environmentally responsible way.

At U.C. Davis, students are lining up for the new sustainable agriculture and food systems program. Washington State University already offers an organic agriculture degree. The school recently became the first in the country to offer an organic agriculture certificate online.
