If you grow zucchini in your garden, you may have a lot of it right now.
Chocolate Chip Zucchini Bread
Ingredients:
3 eggs
1 cup oil
1 1/2 cup Sugar
2 Cups Grated Zucchini
2 tsp Vanilla
2 Cups Flour
1/4 tsp Baking Powder
2 tsp Baking Soda
1 tsp Salt
3 tsp Cinnamon
1 cup Coconut
1 cup Mini Chocolate Chips
1 cup Chopped Walnuts- Optional
Directions:
Preheat oven to 350 degrees.
Combine 1st five ingredients together until well blended.
In a separate bowl blend together Flour, Baking Powder, Baking Soda, Salt & Cinnamon.
Pour dry ingredients into the oil mixture until incorporated.
Stir in Coconut & chocolate chips. Option to add in Walnuts.
Bake at 350 degrees for 1 hour on middle rack.
Zucchini Fries
Ingredients:
1/4 cup Breadcrumbs
1/4 cup Grated Parmesan Cheese
1/4 tsp Salt
1/4 tsp Garlic Powder
1/8 tsp Black Pepper
1/8 tsp Paprika
2 small zucchini
1 egg
Directions:
Preheat oven to 425 degrees.
Slice Zucchini vertically into 1/4'' thick long strips. Cut strips 1/4 inch wide fries.
Break egg into bowl
Blend together first 6 ingredients and place 1/4 of mixture in Zip-lock bag.
In batches, dredge a handful on zucchini strips in the egg, add into the bag and shake to combine until well coated. Lay out in a single layer on a lined baking dish.Repeat with the remaining zucchini pieces until all are covered.
Bake at 425 for 20-25 minutes or until golden.
Serve immediately with your favorite dipping sauce.
