If you grow zucchini in your garden, you may have a lot of it right now.

Chocolate Chip Zucchini Bread

Ingredients:

  • 3 eggs
  • 1 cup oil
  • 1 1/2 cup Sugar
  • 2 Cups Grated Zucchini
  • 2 tsp Vanilla
  • 2 Cups Flour
  • 1/4 tsp Baking Powder
  • 2 tsp Baking Soda
  • 1 tsp Salt
  • 3 tsp Cinnamon
  • 1 cup Coconut
  • 1 cup Mini Chocolate Chips
  • 1 cup Chopped Walnuts- Optional

Directions:

  1. Preheat oven to 350 degrees.
  2. Combine 1st five ingredients together until well blended.
  3. In a separate bowl blend together Flour, Baking Powder, Baking Soda, Salt & Cinnamon.
  4. Pour dry ingredients into the oil mixture until incorporated.
  5. Stir in Coconut & chocolate chips. Option to add in Walnuts.
  6. Bake at 350 degrees for 1 hour on middle rack.

Zucchini Fries

Ingredients:

  • 1/4 cup Breadcrumbs
  • 1/4 cup Grated Parmesan Cheese
  • 1/4 tsp Salt
  • 1/4 tsp Garlic Powder
  • 1/8 tsp Black Pepper
  • 1/8 tsp Paprika
  • 2 small zucchini
  • 1 egg

Directions:

  1. Preheat oven to 425 degrees.
  2. Slice Zucchini vertically into 1/4'' thick long strips. Cut strips 1/4 inch wide fries.
  3. Break egg into bowl
  4. Blend together first 6 ingredients and place 1/4 of mixture in Zip-lock bag.
  5. In batches, dredge a handful on zucchini strips in the egg, add into the bag and shake to combine until well coated. Lay out in a single layer on a lined baking dish.Repeat with the remaining zucchini pieces until all are covered.
  6. Bake at 425 for 20-25 minutes or until golden.
  7. Serve immediately with your favorite dipping sauce.
