Chef Shayna recipes for Cino de Mayo
The Cinco de Mayo holiday is right around the corner, Chef Shayna has a way to may your celebration more festive.

FRESNO, Calif. (KFSN) -- The Cinco de Mayo holiday is right around the corner, Chef Shayna has a way to may your celebration more festive.

Shrimp Ceviche

  • 1/2 lb Shrimp
  • 1 cup diced Red Onion
  • 2 cup Diced Celery
  • 1/3 cup Chopped Cilantro
  • 1 1/2 cup Lime Juice
  • 1 seeded & diced Jalapeno
  • 3 TB Orange Juice
  • 1 Avocado, chopped
  • 1/2 Red Bell pepper (or Tomato) , diced

Directions

  1. Shell & Dice Shrimp. Place in bowl with 1.5 cups lime juice. Make sure the shrimp is fully submerged. Cover with Saran and let chill in the fridge for 30minutes to 2 hours. It is cooking!!
  2. Meanwhile, dice remaining ingredients & mix in a medium size bowl.
  3. Drain the Lime juice from the shrimp and add shrimp to veggies.
  4. Season with Salt to taste and top with Orange Juice.

Serve with your favorite Chips!

Watermelon Margarita ("Margo"-rita, thanks Jason)

  • 4 cups cubed watermelon
  • 2 TB Agave Nectar
  • Light Tequila
  • Orange Juice or Orange liqueur
  • Limes
  • Watermelon wedge for Garnish
  • Salt- to rim glass

Directions

  1. In a blender, blend watermelon and Agave until it is juice.
  2. Pour salt in a ring onto a plate. Using a lime wedge, coat a glass with lime juice and dip rim in salt to coat the glass.
  3. Fill the glass with ice.
  4. Add 1/4-1/2 cup Tequila
  5. Fill with Watermelon Juice.
  6. Add a splash of Orange Liqueur or Orange Juice.
  7. Squeeze Lime Juice
  8. Garnish with Watermelon Wedge
