Here are some refreshing summertime snacks you can make at home-- two different, and delicious, watermelon dishes.

Here are some refreshing summertime snacks you can make at home-- two different, and delicious, watermelon dishes.

Watermelon Rosé Cooler

- 1 small Watermelon, juiced

- 1 bottle rose

- Cucumber, thickly sliced

- Fresh mint, for garnish

Using a cookie cutter cut & trace a small hole in the top of a watermelon. Using an immersion blender, juice the Watermelon. You may have to drain the juice into a pitcher in batches to allow for space.

In a large pitcher, combine Watermelon juice and bottle of chilled rose. Garnish with cucumber and mint.

If time allows, freeze combination in an ice tray & blend to serve as a Frosé.

Watermelon Appetizer

- 1 small Watermelon

- Feta cheese block

- Fresh basil

- Fresh mint

- Blueberries

Cut watermelon into 1.5 inch slices. Lay each slice flat and cut into a square, removing the rinds. Cut the watermelon into cubes making sure to keep them the same size.

Place the watermelon cubes on the serving platter.

Chiffonade the fresh herbs & sprinkle on top of the watermelon blocks.

Cut the feta into smaller blocks and place on top.

Add 1 blueberry to the top. You can secure with a toothpick.

Drizzle with balsamic glaze to finish
