Funnel Cakes
Makes 5, 6" cakes
2 eggs
1 1/3 cup milk
1/4 cup Sugar
2.5 cup Flour
1/2 tsp Salt
2 tsp Baking Powder
Garnishes:
Powdered Sugar
Chocolate Sauce
Berries, Apples

Directions:
1. Heat oil to 375 degrees. I used a slow cooker to contain the oil & recycle the heat. You can use a cast iron pot with at least 1.5 inch of oil.
2. Prepare Batter by first beating together eggs and milk until combined.
3. Stir in the remaining ingredients until a smooth batter forms and let rest for 10 minutes.
4. Using a piping bag or bottle, or a Ziplock bag with a hole cut into the corner, pipe the batter into the hot oil, keeping a long continuous chain flowing. Layer the batter in your own unique pattern. After 30 seconds flip the cake and allow it to sit for an additional 30 seconds until it is golden brown. Remove with tongs and drain on a plate lined with paper towels.
5. To serve dust with powdered sugar, drizzle on chocolate and berries and enjoy!
