Rainbow Waffles Recipe
An eye-catching new twist for waffles.

Ingredients

  • 2 cups all-purpose flour
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 4 large eggs, separated
  • 2 Tbsp. sugar
  • 2 cups whole milk
  • 4 Tbsp. unsalted butter, melted
  • 1/2 tsp. vanilla extract
  • Garnish with Fresh Berry Topping & Whipped Cream
An eye-catching new twist for waffles.

Directions

  1. Preheat waffle iron according to manufacturer's instructions.
  2. Sift the flour, baking powder, and salt into a medium bowl. Set aside.
  3. In a second bowl use a wooden spoon to beat together the egg yolks and sugar until sugar is completely dissolved and eggs have turned a pale yellow.
  4. Add the milk, melted butter, and vanilla extract to the eggs and whisk to combine.
  5. Add the flour mixture to the egg-milk mixture and whisk just until blended. Do not overmix.
  6. In a third bowl, beat the egg whites with an electric mixer until soft peaks form, about 1 minute.
  7. Using a rubber spatula, gently fold the egg whites into the waffle batter. Don't overmix! Pour batter into 4 separate bowls, adding more batter into each bowl so that there is less batter in bowl one and the most batter in bowl 4. Dye the batter with the most red, then orange, than green and the bowl with the least blue.
  8. Coat the waffle iron with nonstick cooking spray if required and pour enough batter in the iron to just cover waffle grid, starting with a blue circle then a green ring around, followed by an orange ring and filling the remainder with red batter.
  9. Close and cook as per manufacturer's instructions until golden brown, about 2-3 minutes. In checking for doneness, open the waffle iron carefully and watch out for steam. Do not open the waffle iron, though, for at least 1 minute. Repeat cooking with remaining batter. When each waffle is done, remove using either tongs or a fork. Don't forget to turn off the waffle iron when all the waffles are done.
  10. Serve immediately with whipping cream on the bottom side of each waffle.

Makes eight to ten 4-inch waffles.
