Spaghetti Pie recipe

Spaghetti Pie
An Italian dish that's easy to whip up during a busy school night.

INGREDIENTS

  • 4 oz. dried spaghetti
  • 1 Tbsp. Butter
  • 1 egg, beaten
  • 14 cup Parmesan cheese, grated
  • 8 oz. ground beef, cooked
  • 1 medium onion, chopped
  • 12 cup green pepper, chopped
  • 1 garlic clove, minced
  • 8 oz. marinara sauce
  • 1 tsp. dried Italian Seasoning
  • 1 cup Ricotta cheese, (or cottage cheese)
  • 12 cup part-skim mozzarella cheese, shredded

DIRECTIONS

  • Cook spaghetti according to package directions; drain. Return spaghetti to hot saucepan and keep warm.
  • Stir butter into hot pasta until melted. Stir in egg and Parmesan cheese; set aside.
  • Preheat oven to 350 degrees. Coat pie plate with cooking spray.
  • Cook ground beef and set aside. Keep a few tablespoons of fat in pan to sauté the onion, green pepper, and garlic until vegetables are tender. Drain off fat. Stir in meat, marinara sauce, and seasoning until warm.
  • Press spaghetti mixture onto bottom and up sides of pie plate, forming a crust. Use the back of a spoon to press it down. Spread Ricotta cheese on the bottom and up the sides of pasta crust. Spread meat mixture over the cheese. Sprinkle with mozzarella cheese.
  • Bake for 20-25 minutes or until bubbly and heated through. Cut into wedges. Makes 6 servings.
