Slow Cooker Hawaiian Pineapple Chicken

Chef Shayna's healthy slow cooker meals
On these cold rainy days, nothing is better than a warm meal at home.

Ingredients

  • 3-4 chicken breasts
  • 1/2 cup salsa
  • 2 TB Buffalo wing sauce
  • 1/2 cup Honey (or 1 cup brown sugar)
  • 2 cups pineapple
  • 1 can black beans
  • 2 cups corn
  • 1 TB garlic powder
  • 1 tsp Paprika
  • 1 tsp Salt

Directions

  1. Add all ingredients to slow cooker, cook on low for 6 hours.
  2. To prep in advance, combine all ingredients in Ziplock bag and freeze flat. For day of preparation, add frozen contents to slow cooker and cook on low for 7 hours.
  3. Shred chicken.
  4. Serve over a bowl of rice, with shredded lettuce, sour cream, shredded cheese, avocado.
