Sweet Potato Crostini
Chef Shayna shows us the twist on an old classic -- sweet potatoes.

Ingredients:

2 large Orange Sweet Potatoes

Olive Oil

Salt & Pepper

1/2 tsp paprika

4 oz Goat Cheese

1/2 cup candied pecans

1 pomegranate

Honey

Balsamic glaze

Preheat oven to 500 degrees.

Slice sweet potatoes in circles about 1/2 inch thick.

Coat in Olive oil & sprinkle with salt, pepper, and paprika.

Place in a single layer on a lined baking sheet. Place in oven for 8-10 minutes.

Remove and let cool.

Spread on goat cheese, sprinkle with chopped pecans, cranberries, pomegranate arils.Drizzle on Honey & Balsamic glaze. Garnish with chopped basil.
