Chef Shayna: One Pan Dinner
An easy dinner to make during the chaotic holiday season and the best part is it saves having to do many dishes.

An easy dinner to make during the chaotic holiday season and the best part is it saves having to do many dishes.

One Pan Dinner:

- 12 small potatoes

- 1 head Broccoli, chopped

- 12 oz Salmon filet

- Olive oil

- Salt & Pepper

- Parmesan Cheese

Salmon rub:

- 1-2 TB honey

- 2 cloves garlic, minced

- 1 TB each dried parsley, thyme, oregano

- 1/4 tsp chili powder

- 1/2 cup chopped fresh parsley

- juice of 1-2 lemons

- 1 lemon, sliced

Preheat the oven to 450

Bring a pot of water to boil, make sure to include a generous amount of salt. Boil potatoes for 15 minutes or until tender with a fork. Drain and set aside.

Place potatoes on the outside edges of lined baking dish. Use the back of a fork, or potato masher to smash. Drizzle with olive oil and sprinkle with salt, pepper, and parmesan cheese.

Next, add broccoli along with the other 2 outside edges, make sure to toss in olive and season with salt and pepper.

Lay the salmon filet down in the center. Drizzle with olive oil and salt & pepper.

In a small bowl combine the salmon rub ingredients. Pour on top of salmon and lay lemon slices along the top.

Place in the oven for 20 minutes or until salmon is done.

Serve & enjoy!
