Mr. Food: Roasted Garlic

1 large unpeeled garlic bulb
1 teaspoon olive oil
1/8 teaspoon coarse (kosher) salt

 

  1. Preheat oven to 325°F. Cut the garlic bulb in half crosswise (horizontally) and place on a piece of aluminum foil. Lightly sprinkle cut sides with olive oil and salt.
  2. Put the 2 halves back together and wrap tightly in the foil. Bake 1-1/2 to 2 hours then open the garlic bulb and use as a spread or mix into any of your favorite dishes.


Minced Garlic in No Time
  • Separate a clove of garlic from the bulb, and peel it; hold the end with your fingers.
  • While holding the end of the clove, on a plate or in a shallow bowl, rub the garlic with the tines of a fork, sort of mashing it. That's it!
