Ingredients
  • 2 eggs
  • 2 tablespoons milk
  • 2 tablespoons shredded Cheddar cheese
  • Salt and pepper to taste
Instructions
  1. Coat a 12-ounce microwave-safe coffee mug with cooking spray. Add eggs and milk; beat until blended.
     
  2. Microwave 45 seconds at high power; stir. Microwave 30 to 45 seconds more, or until eggs are almost set (see Note).
     
  3. Top with cheese, season with salt and pepper, and serve.

Ingredients
  • 1 (8-inch) flour tortilla
  • 1 egg
  • 1 tablespoon shredded Mexican cheese blend
  • 1 tablespoon salsa
Instructions
  1. Press tortilla into microwave-safe cereal bowl. Break egg into center of tortilla then beat gently with a fork until blended, being careful not to tear tortilla.
     
  2. Microwave 30 seconds on high power; stir. Microwave 30 to 45 more seconds, or until egg is almost set (see Note).
     
  3. Remove tortilla from bowl to flat surface. Top egg with cheese and salsa. Fold bottom of tortilla over egg then fold in sides, and serve.
