- 2 cups pancake mix
- 1 cup milk
- 1 cup vanilla yogurt
- 2 eggs
- 1 teaspoon lemon zest
- 1 cup fresh blueberries
- Blueberry or maple syrup for drizzling
- In a large bowl, combine pancake mix, milk, yogurt, eggs, and lemon zest; mix until well combined. Stir in blueberries.
- Coat a griddle or skillet with cooking spray. When griddle is hot, pour on 1/4 cup batter per pancake. When bubbles form and edges begin to brown, flip pancakes and brown on other side. Repeat until all batter is used.
- Serve immediately with syrup.
