Recipe for the Clovis Rodeo inspired One Pot Bean Dinner (Chef Shayna)

  • 1 lb. ground beef
  • 1/2 lb sliced bacon (cut into 2 inch pieces)
  • 1 medium onion, finely chopped
  • 2 cans Pork & Beans (31 oz each)
  • 1 can Kidney Bean (16 oz)
  • 1 can White Beans (Butter lima)
  • 1 1/2 cups ketchup
  • 1/4 cup Brown Sugar
  • 1 TB Liquid Smoke
  • 3 TB Cider Vinegar

  1. In a skillet, Cook ground beef until browned, drain fat and transfer meat to slow cooker. In the same pan, cook bacon and onion, stirring until limp- about 6-8 minutes. Do not cook bacon fully. Transfer to slow cooker. Add the remaining ingredients and stir to combine.

  2. Cover and cook on Low for 6 to 9 hours.

Serve with corn bread and a salad.
