We have a delicious dish that is perfect for summer.
Directions:
1. On a plate, layer a bed of fresh arugula and pack it down.
2. Using a metal cylindrical mold, pack in chicken, watermelon, cantaloupe, cheese and pecan, packing down each layer. Remove the mold and drizzle with olive oil and balsamic vinegar, salt and pepper.
3. Garnish with fresh basil.
