Watermelon Popsicle Recipe (Chef Shayna)

Watermelon Sorbet
  • Watermelon, seeded- enough to make 2 cups pureed
  • 1/4- 1/2 cup sugar
  • 3 Tbsp. fresh lime juice


Lime Semifreddo
  • 1 can (14 oz.) sweetened condensed milk
  • 1 tsp. grated lime zest
  • 1/2 cup fresh lime juice
  • 1/2 cup heavy cream

Supplies
  • 24, 3 oz Paper cups
  • Popsicle Sticks

Directions:

To make Watermelon Sorbet: Coarsely chop watermelon flesh; puree enough to
yield 2 cups in a blender. Add sugar and lime juice; blend an additional 30 seconds.
Pour into cups, filling 2/3 way full. Place in freezer for 2 hours.
Once mixture starts to harden, poke popsicle stick into center.

To make Lime Semifreddo: Whisk together condensed milk, zest, and juice. Beat
cream until it just holds stiff peaks, then gently fold into condensed milk mixture.
Put into ziplock bag and pipe on top of frozen watermelon layer.
Place cups back in freezer and let freeze over night.

Yield: 24 popsicles
