The campaign will run through December 9th and aims to raise money to donate student-produced holiday hams to charitable organizations affiliated with Fresno State.
Donations are being accepted at the Gibson Farm Market in $5 increments. One ham costs $30, and the goal is to collect enough to purchase and donate 230 hams to families in need. Last year's month-long campaign raised money to donate 218 hams and exceeded its goal of 175.

Preparing the ham is a month-long process that starts with:
- trimming off excessive fat
- applying a special brine recipe & letting ham sit for 14 days
- smoking the ham for + 24 hours
- chilling the ham and cutting into spiral-sliced shape
- adding a glaze packet with sugar, brown sugar, cinnamon & other spices
All the hams come from local pork producers and Fresno State students from the meat judging team. The Meat Science Club and meat processing lab help prepare them on campus. The recipe is time-tested & developed by Fresno State students.
According to Fresno State, nearly 1/3 of students have food security issues, so it's a chance to help them and area families have a brighter holiday and support the community.
The Gibson Farm Market will also be hosting a holiday open house on Thursday-Friday (12/1-2) this week during normal store hours between 9am-6pm.
