Chef Shayna: Cranberry Pistachio Cheese Log

It's a festive red and green appetizer that's perfect to serve up over the holidays.

Cranberry Pistachio Cheese Log

-1 heaping cup fresh cranberries

- 1 cup shelled pistachios

- pinch of salt

- 5 oz goat cheese

- 4 oz cream cheese, softened

- 1 TB sugar

- 1 TB honey

- 1/4 tsp salt

- 1/4 tsp thyme

- 1/4 tsp rosemary

- 1/8 tsp pepper

- Crackers for serving

In a food processor, blend cranberries, pistachios, and salt until its coarsely blended. Removed 1/2 cup and place in a medium bowl.

In the same medium bowl, stir in the remaining ingredients and use a spatula to mix well.

Once the mixture is fully combined, lay out a piece of plastic wrap on to a flat surface. Pour the cheese mixture into the center and wrap the plastic to mold it into a log.

Place the cheese log into the freezer for 20 minutes.

Meanwhile, pour the remaining cranberry mixture on to a piece of parchment paper (or gallon freezer bag) and press it into a thin, even coat.

Place the cheese log along the edge of the cranberry base and use the parchment paper to roll the 2 together until the cheese is fully coated.

Place on serving platter and serve with crackers.
