Dine and Dish: Lisa's Southern Smokehouse in Clovis

CLOVIS, Calif. (KFSN) -- Smoky BBQ tri-tip, chicken and hot links are served right off the grill at Lisa's Southern Smokehouse at Tollhouse and Sunnyside in Clovis.

"I want to bring a little bit of those flavors of the South and all over the country," says owner Lisa Segura.

Lisa calls this her famous BBQ chicken.

"We marinate it first for two days before cooking," she said. "We're smoking it, and then we're putting a glaze on top with our proprietary signature BBQ sauce. I really married the flavors of Mexican food with the BBQ."

Lisa and her husband also own Miguel's Salsa Taqueria inside the Peacock Market.

"So we've got our St. Louis spareribs right here -- they're going to be a pork spare rib," says Adrian Salazar. "We're going to start seasoning them up. These are going to go into our BBQ pit, our smoker, for about four hours."

"We use oak and almond to get a different flavor profile," Lisa said.

They're sliced and served with different BBQ sauces.

Pit master Max Pozos prepared the pulled pork for a sandwich.

"Max comes in at 5 am every morning and gets the BBQ going," Lisa said.

The restaurant also offers a three-meat plate if you're not too sure what you want.

A trip to New Orleans inspired this surprise - cajun shrimp.

"Discovering the holy trinity of flavors and putting it all together in our red beans and slow-cooking that," Lisa said.

Lisa also sells sweets inside the market.

"I have banana pudding and beignets," she said.

Segura believes her dishes are a cut above the rest.

"I want every flavor to be a memory in the making," she said.
