Easy 1 minute dip
Prepared Bruschetta Mix (I prefer Trader Joe's brand) Prepared lentils Feta cheese Serve on: toast crackers
In a medium bowl, combine 1 cup of Bruschetta mix with 1 cup of Lentils. Sprinkle on cheese & stir lightly.
Skinny Mediterranean Layer Dip
1 container hummus
1/2 cup plain Greek yogurt
1/2 cucumber, chopped
1-2 tomatoes, shopped
4-6 artichoke hearts, chopped
1/4 cup Kalamata olives, pitted & sliced
1/3 cupGoat cheese crumbles
Pita chips, sliced veggies for serving
In the bottom of a baking dish, use a spatula to spread hummus evenly along the bottom. Carefully spread the yogurt on to of the hummus. Next sprinkle on the chopped cucumbers, tomatoes, olives and artichoke hearts. Top with feta cheese & option to garnish with fresh parsley.
Serve with pita chips for dipping.
