Makes 8 to 10 servings
1 tablespoon butter
1 (8-ounce) package low-fat cream cheese
1 garlic clove, chopped
1 (6-ounce) package fresh baby spinach
1 (14-ounce) can artichoke hearts, drained and chopped
1/2 cup light sour cream
1/2 cup shredded part-skim mozzarella cheese
1/2 teaspoon salt
1/8 teaspoon ground red pepper
- In a large skillet, melt butter over medium-high heat. Add cream cheese and garlic; cook 3 to 4 minutes, stirring constantly until cream cheese melts.
- Stir in spinach and cook until wilted. Stir in remaining ingredients and cook until cheese is melted and mixture is heated through. Serve immediately.
NOTE: For a crusty top, place the mixture in a shallow baking dish and bake in a preheated 350-degree oven for 20 to 25 minutes, or until golden.
