Deputies were searching for Maurice Ainsworth, who escaped outside a hospital in Santa Cruz Monday afternoon, prompting lockdowns at area schools.
Authorities say Ainsworth was being transported when he took a deputy's stun gun and attacked the officer.
Investigators say the inmate also shot a female security guard and stole her car keys.
Ainsworth has a criminal history of vandalism, arson, and weapons theft.
