Mr. Food: Crostini

1 (1-pound) loaf Italian or French bread, cut into 1/2-inch-thick slices
3 tablespoons olive oil
3 garlic cloves, chopped
3/4 pound thinly sliced deli roast beef
1 (12-ounce) jar roasted red peppers, drained and chopped
2 cups (8 ounces) shredded Italian cheese blend

1. Preheat the oven to 450°F. Arrange the bread slices on a baking sheet.

2. In a small bowl, combine the olive oil and garlic; brush lightly over the bread slices and bake for 6 to 8 minutes, or until golden.

3. Remove the bread from the oven and layer each slice with roast beef, roasted peppers, and cheese.

4. Bake for 2 to 4 minutes, or until the cheese is melted. Serve immediately.
